Savory Scones with Gruyere and Sausage

Total Time: 50 minutes | Yield: 6 scones

Ingredients:

  • 2 cups flour

  • 1 tsp. salt

  • 2 tsp. baking powder

  • 8 Tbsp. (one stick) unsalted butter, cold, cut into 1-inch pieces

  • 1 cup Gruyere, shredded

  • 1 egg, separated

  • 4 ounces ham, chicken Italian sausage, or veggie sausage

  • 1 egg, separated

  • 1/2 cup whole milk

  • Flaked sea salt (optional)

Directions:

Whisk egg yolk and milk in a medium bowl. Set aside. (Reserve egg yolk for egg wash.)

Mix flour, salt and baking powder in a large bowl until combined. Using a pastry cutter, cut butter into flour mixture until it resembles coarse cornmeal. Stir in Gruyere and ham or sausage. Make a well in the center and pour in milk and egg mixture. Using your hands, bring dough together until just combined, making sure to not over mix.

Transfer dough to a lightly floured work surface and flatten into a disk approximately 1-inch thick. Cut into six wedges. Transfer wedges to a baking sheet lined with parchment paper, then brush each with the reserved egg white and sprinkle with flaked sea salt. Transfer to freezer and allow dough to chill for 10 minutes.

Preheat oven to 400°F. After dough has chilled for 10 minutes, transfer to oven and bake until lightly browned on top, about 25 minutes.
