Scallion Yorkshire Puddings

Yield: 36 individual Yorkshire puddings | Time: 30 minutes

Ingredients:

  • 2 cups flour

  • 2 tsp salt

  • 6 eggs

  • Butter or pan drippings (1/4 Tbsp. x 36) -- 9 Tbsp

  • 2 cups whole milk

  • 1/3 cup green onions

Special Equipment:

  • 3 12-cup muffin tins

Directions:

Preheat oven to 425° F.

Mix flour and salt in medium bowl. Set aside.

Whisk eggs in a large bowl until combined. Then whisk in milk. Add the flour mixture to eggs and whisk by hand. Whisk in green onions.

Place 1/4 Tbsp butter in each well of a 12-cup muffin tin and put in oven until melted, about one to two minutes. Remove from oven and pour 2 Tbsp of the batter into each well and bake until puffed and brown and crispy on edges, about 10 minutes. Serve immediately.

Cook’s Note: If you don’t have three muffin tins, simply repeat the process using all batter has been used. Recipe should yield approximately 36 individual Yorkshire puddings.
