Homemade Tortilla Chips

This is basically a “no recipe” recipe. All you need are three ingredients - tortillas (corn or flour), some sort of neutral cooking oil, and salt to make a batch of warm fresh tortilla chips. Serve with your favorite salsa, guacamole or enjoy on their own.

Ingredients

  • Small tortillas (corn or flour), cut into four wedges*

  • Vegetable or canola oil

  • Salt

Directions

Pour vegetable oil into a large heavy bottom pot so that it is about 1 inch deep and heat over medium high heat. Fry tortilla wedges in batches, about 1 minute on each side, until they are golden brown and crisp. (I don’t typically use a thermometer when frying, but if you would like to, the temp should be about 350°F.) Using a slotted spoon, transfer to a plate lined with paper towels and immediately sprinkle with salt. Repeat until you have the desired amount of chips.

*I find the smaller tortillas are the perfect size for chips, but you can use whatever you have on hand and simply cut tortillas to your desired size.
